What is the 4820 Dinner Series?
With the beginning of a new year and a fresh calendar in front of us, we talked about numerous special events, and dinners we wanted to plan. Wine tastings, craft beer dinners, farm to table...the list goes on. Inspired, and with great pleasure, we introduce the 4820 Dinner Series. We chose the name 4820, because our address is 4820 N. Clinton, and we had a desire to set this dinner series apart from the rest, to create something special.
We begin with our first, Napa & Sonoma, February 27, 2012. A six course menu, carefully paired and inspired by a selection of Napa & Sonoma Valley wines.

FIRST COURSE
Pan-seared day-boat scallop, served over a grilled baby leak puree, topped with candied Meyer lemon zest and sprinkled with California whitefish caviar infused with saffron.
PAIRED WITH: DRY CREEK CHENIN BLANC
SECOND COURSE
Arugula, mango.sliced avocado, and red onion tossed with a light Frog's Leap sauvignon blanc vinaigrette. Accompanied with capicola ham and goat's cheese stuffed date along with smoked ancho chili roulade.
PAIRED WITH: FROG'S LEAP SAUVIGNON BLANC
THIRD COURSE
Pork Tenderloin stuffed with California figs, tart cherries, and carmelized onions. Paired with roasted heirloom fingerling potatoes and glaze de porc.

Red wine marinated tenderloin of beef, slow-roasted encrusted with shitake mushrooms, accompanied by Spanish chorizo and Parmigiano reggiano risotto.

SIXTH COURSE
Dark Chocolate shortbread paired with cabernet poached black cherries, spiced mascarpone mousse, and a 72% cacao bite sprinkle with Sonoma Vallley sea salt.
PAIRED WITH B.R. COHN SILVER LABEL CABERNET
